This week we are
broadcasting live from
the Arizona Travel Show
at the new University
of Phoenix Stadium in
the city of Glendale. Chip
Caruso, the organizer
and President of Travel
Industry Shows, promises
one of his best shows
yet. |

The new Cardinals' Stadium
near Phoenix. It's a
space-age,
domed building with a
carpet of real grass
that rolls in and
out to accommodate a
sports event or to serve
as the
perfect venue
for a state-of-the-art
expo. |

While talking to Chip he
confided that as this
show unfolded, something
magical was happening.
Or as he put it,
"everything aligned like
never before", the
exhibitors, the media
coverage and the
response from the
public. We're looking
forward to the whole
shooting match. And
speaking of shooting
match, I am especially
happy this week, to be
talking about some of my
favorite subjects, the
Old West and the deserts
of the Southwest part of
the United States.
This weekend, our
audiences will meet some
very interesting people
who will introduce us to
the hidden treasures of
the old West. We'll
celebrate one the top
ten
true western towns in
the country called
Wickenburg, Arizona.
I can remember the many
times I passed through
this little down town on
the way home to Southern
California from my alma
mater Arizona State
University. It's
timeless with
quaint architecture and endearing
surroundings. I think
you will have a
hankering to hook up to
a Dude Ranch in the area
or just come enjoy a
stroll down Main Street.
You'll feel the
welcoming spirit and
don't forget Wickenburg
is open year round!
We are also getting
excited about the Wild
Women Travel Fair in San
Diego coming March 10,
2007. I will be
presenting a topic
titled Wild Women
and Safe
Travels-An Oxymoron? We
dont think so!

Dressing

Ingredients:
1 handful
baby greens
4 oz.
boneless
chicken
breast
Tandoori
spice
1 oz.
coconut milk
1 stalk of
lemon grass
root
1 small red
onion
(sliced)
salt &
pepper to
taste
2/3 cup
mango puree
(see below)
1/3 olive
oil
1 teaspoon
minced
scotch
bonnet
pepper
1 teaspoon
chopped
cilantro
1 juice from
a whole
orange
1 whole lime

Directions:
Season
chicken with
salt and
pepper,
coconut milk
and Tandoori
seasoning.
Cut lemon
grass into
spears and
place
chicken on
skewers.
Place in
cool place
and allow to
sit for 2
hours.
Place
chicken on
grill and
cook for 3
to 4 minutes
on both
sides.
Making
the Mango
Dressing:
Place mango
puree into a
bowl and add
oil. Add
the scotch
bonnet to
the dressing
and the
juice from a
whole
orange.
Presentation:
Place baby
greens on a
plate,
chicken
Tandoori on
the side,
and pour
dressing
over top.
