Here’s a great story of another “rock star” chef. He’s a young Italian kid from NYC who grew up hanging out at his family’s restaurant business and eventually went off to refine his skills at culinary school. In fact, his entire career has been spent working in commercial kitchens and he holds an associates degree in Culinary Arts and bachelors in hospitality management. His passion for food has taken him from cutting edge kitchens in New York City to the Caribbean, Ireland and Russia, but he now calls Del Mar, California, his home. He’s the executive chef at a tony new restaurant near the Pacific Coast called Bistro 39. A little cultural shock for the chef maybe, but Southern California residents and visiting travelers have a real taste treat in store if they get a chance to savor some of the many surprises cooked up by Larry DiFolco.

A little known niche in the travel and tourism market (at least to us) is the recreational park trailer industry. Sometimes referred to as “park models”, these are really cute 400 square foot manufactured vacation cottages you’ll find at nearly 12,000 campgrounds and RV resorts across the country.

These modern versions of the old log cabin summer home are designed as weekend retreats or seasonal vacation dwellings and some are even solar powered so they can provide a cozy, comfortable retreat in even the remotest of locations. Typically upscale in appearance, they often include modern appliances, hardwood floors, bay windows and lofts as well as cherry, oak or maple cabinetry. Most importantly, they are also very affordable, with prices starting in the $30,000 USD range. Bill Garpow will tell us more about this most delightful way to commune with the great outdoors

OK, just how green can an airline possibly become? Find out the course of sustainable development this 85 year-old airline set out on over two decades ago. Kati heads up all things environmental at Finnair Group and points out that effective sustainability strategies and staying highly competitive are not mutually exclusive ideals. Finnair’s approach incorporates the latest technological advances, direct routes, optimum flight levels and efficient fleet planning to achieve “green aviation”.  This year, Finnair introduces the new, greener A330-300 aircraft on its New York-Helsinki route, with fuel consumption and emissions 20% lower than existing levels. We still have a way to go as the International Air Transport Association (IATA) has set the lofty (pun acknowledged) goal of emission-free aviation by 2050. Finnair intends to lead the way.
